Moringa the Miracle Greens

This week, our final week of our 3rd CSA membership period, or members will receive a bag of fresh, organic moringa leaves in their box of produce.  You may know all about moringa but then again, you may not.  The leaves from this tree are packed with powerful goodness.  Moringa leaves can be eaten as salad greens, added to rice dishes, put in omelettes, added to breads and muffins, put into casseroles, stir-fried with onions, added to any vegetable dish – the list is endless! 

Here’s a simple and tasty recipe for moringa leaf quiche:Moringa-Oleifera-facts-infographic

  • 6 eggs
  • Fresh organic dill, chopped into sections
  • Chopped or thinly sliced onions
  • Fresh cream and some olive oil or butter
  • Lots of freshly picked organic Moringa Oleifera leaves
  • Queso cheese, or cheese of your choice
  • Several minced fresh garlic cloves or garlic salt
  • Uncooked pastry shell, or make one from scratch.
 
Preheat oven to 325 degrees Fahrenheit, mix all of your ingredients
together in a mixing bowl, and pour them into the pastry shell. Bake for 35
minutes, or until light brown on top.
